Dry Garlic Sausage

Katherine Laurienti founded North Denver Sausage to honor her late husband, John. His dry sausage recipe is still being used today, and our mission is to honor his memory and to continue celebrating Italian traditions.

Many cultures have perfected different ways of curing or preserving meat. Our dry sausage comes from an Italian tradition of curing pork using only salt and air. We do not cook our sausage like commercial sausage makers do because all artisanal producers know that would change the flavor. Our drying process results in a beautiful sausage with deep, complex flavors that requires no refrigeration and has a practically unlimited shelf life. 

Dry sausage is versatile and can be served in any setting. We recommend pairing it with your favorite wine, cheese, or bread. We would love for you to try some of our dry sausages today.
